You don’t need a crystal ball to know when your body is craving comfort.
Sometimes, clarity isn’t about answers — it’s about eating something warm, breathing slowly, and letting your nervous system know you’re safe.
🥄 Spinach Parmesan Quiche
(CSJ Version – Gut-Friendly)
Ingredients:
1 unbaked pie shell (gluten-free or regular)
1–1½ cups baby spinach (fresh or thawed from frozen)
3 eggs
¾ cup heavy whipping cream
½–¾ cup grated Parmesan cheese (to taste)
Salt + cracked pepper
Optional: pinch of thyme or nutmeg
Instructions:
1. Preheat oven to 375°F (190°C).
2. Line your pie shell and gently press down the edges.
3. Sauté spinach just until wilted, or pat dry if thawed.
4. In a bowl, whisk eggs, cream, cheese, salt, and pepper.
5. Add spinach to the mix (or layer it in the crust first).
6. Pour mixture into shell.
7. Bake for 30–40 minutes until golden and firm in center.
8. Cool slightly. Serve warm with lemon tea and a deep breath.
